The Sicilian company Lalaina S.r.l., founded by Maria Chiara Valdemone and Giuseppe Gaudioso, has revolutionized the seafood sector by patenting an innovative process for the production of Colatura di Gambero Rosso® from Mazara del Vallo. This project was born from the desire to enhance a valuable resource that is often overlooked: the shells and heads of Mazara red shrimp. These shells are an extremely valuable resource, as they contain all the authentic aroma and flavor.
