Whole frozen red shrimp

Mediterranean red shrimp (Aristaeomorpha foliacea), caught in the Strait of Sicily – GSA 16 through deep-sea trawl fishing. Selected by size and washed with seawater on board, treated with an anti-melanosis additive, and frozen at -45°C within 2 hours of catch. Transport and storage at -18°C. Available in four sizes: 16/20 – 21/30 – 31/40 – 41/50 pcs/kg.
Suitable for whole serving, as well as for the preparation of stocks, bisques, and broths in the Ho.Re.Ca. sector.
