Red Shrimp
The Red Shrimp has a deep red-purple, almost coral color, and on the palate it offers a unique taste, with pronounced and sweet notes due to its high mineral content. It is classified by “size” or “grade,” and depending on the crustacean’s dimensions, it can be categorized as “Grade I shrimp,” “Grade II shrimp,” and so on.
The Red Shrimp is caught using trawl nets on the muddy seabeds of the Sicily Channel, at depths ranging from 200 m to 1000 m. It is carefully selected by our fishermen, blast-frozen on board, and then transferred to our warehouses, ensuring the cold chain is maintained and additional quality checks are carried out.
